One of the most powerful shortcuts is the search command functionality invoked via: <⌘> + <⇧> + P.
A few more shortcuts quickly made it into my muscle-brain:

How do you format code in Visual Studio Code (VSCode)

But, … you need an Extension (<⇧> + <⌘> + X)
Select XML Tools, hit install, then reload … et voila: Nicely formatted XML.
